vacation is over! Happy New year!

Hello..sorry I have been away but have been like many of you working and going to school plus being a mom. My kids were home for a  few weeks and I started feeling like " Hazel" that cute housekeep from my childhood show..not so long ago haha Well I think it's time to come back and I am taking some time from school to get it all in check. I hope you had a nice holiday, I am ready to get started on eating better and getting in shape this year to repair all the damage I created as a workaholic. Simple yet elegant GF can be easy as 1-2-3! try this Goat Cheese Souffle!

I recently had a friend ask advice on help making a special dish gluten free for a dinner guest she discovered was on a gluten free diet. I told her no worries, just got to Whole Foods and find a nice fine rice flour...and that some were sweet like a brown rice and others less so. She informed me the souffles came out swimmingly and that I should share it with you so here it is, please feel free to write comments on your experience making this dish or questions....and have fun!

Also if anyone makes it using Toffutti cream cheese or anouther substitute to be cassein free, please let me know thank you!

Yum! Betty Crocker Gluten Free Brownies!

I am in love with Betty Crockers gluten free (GF) brownie mix. When you are on a budget like many of us are these days, it's nice to be able to have a treat that's not breaking the bank. While I love and support many pioneer brands like Namaste and Bob's Redmill to name a few, this has moved to first place. It has an average cost of 3.50-4.00 and I don't have to add my own ingredients at an extra cost to imporve flavor. I usually ad vanilla (pure from Costso veryheap) and Trader Joe's chocolate chips (1.99), Betty Crocker's has chips included and they have managed to avoid any 'aftertaste' that we have become used to in GF foods, you know what I mean. I only have to have a few eggs and Earth Balance butter to make sure it' also cassein free. Even thug my daughter has been eating GF most of her life, and is used to the brands used, she still had an extra special feeling of inclusion that it was a household brand from Von's. Being on the Autism/PDDspectrum she is use to benoff the norm and any way that she is included is noticeable. By the way, her picky non-GF sister....loves these too so no need to have tempting regular gluten brownies about, so much heartfelt thanks from all of us! xxxx

Jones Dairy Farm Gluten Free Sausages

Wow! No sooner had I seen these on facebook, did a friend give me a box! I cooked them right away and they are great! Super yummy, not too spicey and tender. Since they come fully cooked and browned they are fast and wasy also an with back to school it is a mom's dream. Just scramble some eggs, or if kids are old enough whisk some eggs up in a coffee mug that has a coat of butter or non-stick spray. Place in the microwave for a few minutes until fully fluffy and cooked. I use a brown rice gluten free tortilla from Trader Joe's also already browned, just warm to soften and add sausage with eggs and go! But, again I have to say this is my favorite sausage hands down, it does not dissolve or shrink and stays tender and yummy. So pick some up I am pretty sure you will be happy too. :D

Nature valley Granola bars go Gluten Free!!

Wow! so excited, so far there are only two flavors but let's hope it takes off and they ad more especially having to do with chocolate if you know what I mean hehe. Heres look! General Mills has a new site "Live Gluten Freely"

I have just discovered a new site by General Mills. It has it's placve among all the pages and blogs on gluten free now. As I predicted years ago, once large corporations came aboard prices would come down. The compnaies that charge 8.00 for a cake mix, although great quality are going to be left in teh gourmet isle while companies like GM make it affordable and easy to reach. For those of us that have been around a long time, for us 10 years on the GF diet, we have had to sacrifice in order to pay the high prices just to make a simple birthday cake which could run 25.00 for a very small cake and then the labor of love of course. I will still make my pancakes from scratch because my recipe cannot be beat, but it is comforting to be able to go to Von's and buy Rice Chex or a BC cookie mix for under 5.00. (Stay tuned for a Muddy Buddy recipe from Chex) I hope you will continue to find small sites like mine, from real people who are shopping daily and finding new twists on old things and have that personal touch that corporate sites just can't replicate. This is really good if  you like crisp cookies, be careful not to over cook. It is a lot more affordable and I add a little vanilla extract.

Pamela's is always great..

we love their wide variety of cookies and when I don't have time to make from scratch this mix is handy and delicious! I add vanilla extract, a tbsp of melted Earth Balance butter, tbsp sugar and chocolate chips from trader Joe's, they are gluten and dairy free. Who needs syrup? hehe
